Easy Veggie Miso Ramen

Hey!
I have been vegetarian for a little over a year now, and I am loving it! Throughout my vegetarian journey, plus my desire to fuel my body in a healthy way, I have grown to LOVE cooking. I am always on the hunt for fun, new, easy, and tasty recipes.
Over Christmas, I got a bunch of new cookbooks, and couldn't resist the urge to try some new recipes. (It also has been a good outlet and fun way to stay creating and happy, since I am off dance for a while!)

Here is one of my new favorite recipes:
Easy Miso Ramen
Prep/cook time: 35 min
Serves: 4
Ingredients:
3 tablespoons of olive oil
1/2 yellow onion chopped
2 cups chopped broccoli
2 tsbp minced garlic
2 tbsp ginger paste
2 heads of baby bok choy, chopped
2 tbsp soy sauce
1 tbsp yellow miso
1 cup of sliced mushrooms
4 cups of vegetable broth
1.5 tsp Better Than Bouillon No Beef Base
2 cups baby spinach
3.5 oz ramen noodles
Here's how to make it in just a few simple steps!
Heat olive oil in a large pot on med-high heat. Add onion, broccoli, garlic, and ginger and saute for 5-6 minutes.
Add bok choy, soy sauce, miso, and mushrooms, and saute for another 5 minutes.
Add vegetable broth, Better Than Bouillon, spinach, and ramen. Cook for 10 minutes, or until oodles are cooked through and vegetables are tender.
Serve hot with optional toppings, like hot sesame oil, soft boiled egg, corn, thinly sliced cabbage, fresh basil etc.

It also went great with some soba spring rolls with peanut dipping sauce that you can look for a post about soon:)
This meal is great to make a couple batches for leftovers for the week, and also includes so much flavor, plus lots of veggies!
