Summer Spring Rolls

Wanting to get creative and try out a new recipe that is great as an appetizer or to use for lunch? This Fresh Sesame Soba Spring Rolls with Peanut Dipping Sauce is PERFECT!

Spring Roll Ingredients
4 oz soba noodles
1 tbsp sesame seeds
2 tsp toasted sesame oil
1 large carrot
2 cucumbers
6-8 rice papers
2 medium jalapeños cut lengthwise
1 avocado cut lengthwise
1/4 cup chopped green onions
Handful of fresh cilantro

Peanut Sauce
1/3 cup creamy peanut butter
2 tbsp rice or white wine vinegar
2 tbsp reduced sodium Tamara or soy sauce
2 tbsp honey
1 tbsp lime juice
2 tbsp toasted sesame oil
1 tsp grated fresh ginger OR 1/4 tsp ground ginger
2 medium garlic cloves(pressed or minced)
pinch of red paper flakes
1. Bring large pot of salted water to a boil and cook soba noodles just until al dente. Rinse under cold water, drain, and return them to the pot. Toss with sesame seeds and toasted sesame oil. Set aside.
2. Meanwhile, make the dipping sauce: in a small bowl, whisk together peanut butter, vinegar, Tamara, honey, lime juice, sesame oil, ginger, garlic, and pepper flakes until well combined.
3. To prepare spring rolls, julienne the carrot and cucumbers. Toss with soba noodles.
4. Fill a shallow pan larger than your rice papers with warm water. Fold a lint-free tea towel in half and place it next to dish. Make sure your prepared fillings are within reach.
5. Place one rice paper in water for about 20 seconds. You want it to be pliable but not super floppy!
6.Fill with ingredients to your liking, leaving about 1 inch around edges.
7. Fold lower edge over the fillings, then fold over the short sides like making a burrito. Lastly roll it up, stretching the remained long side around the roll to seal. Repeat with remaining ingredients.

This recipe is one of my favorites! It is great for so many occasions. Any leftover peanut sauce pairs so nicely with veggies. If you try this out, send any pictures my way!
