Mint Pesto

We all love a good dip, and here's a super fresh one and super delicious! Check out this mint pesto that is super great for prepping at the beginning of the week.


Ingredients:

  • 1/2 cup pepitas

  • 1/2 c mint leaves

  • 1/2 c parsley

  • 1/2 c thawed frozen peas -1 small garlic clove

  • 2 tbsp fresh lemon juice

  • 1/4 tsp sea salt

  • 1/4 c olive oil


AND its super simple!! Just blend in a food processor, spoon into serving dish, sprinkle with parsley, pepitas, and olive oil, and enjoy:)
