My FAVORITE Granola!!!

I love granola, sometimes too much;) but when you buy it, it often is filled with added oil and sugar. This recipe from Oh She Glows is not only the best granola I have ever had, but also doesn't have much added sugar, has no refined sugars, and has low oil content.

Also, it's super easy!

Here's what you need:

  • 2 cups gluten-free oats

  • 1 cup sliced or chopped almonds

  • 1/4 pumpkin seeds(optional)

  • 3 tablespoons coconut sugar or granulated sugar of choice

  • 2 tablespoons ground flax

  • 1 teaspoon cinnamon

  • 2 vanilla beans, scraped or 1/2-3/4 teaspoon pure vanilla bean powder(I often don't use this and it still tastes AMAZING)

  • 1/2 teaspoon fine sea salt, or to taste

  • 1/4 cup virgin coconut oil, melted

  • 1/3cup pure maple syrup

  • 3 tablespoons smooth natural almond butter or peanut butter

  • 1 teaspoon pure vanilla extract

1. Preheat oven to 325 degrees Farenheit and line a large baking sheet with parchment paper.

2. In a large bowl, stir together all the dry ingredients(through vanilla bean)

3. In a small saucepan, melt the coconut oil over low heat. Remove from heat, and stir in maple syrup, almond butter, and vanilla until smooth.

4. Add the wet mixture to the dry and stir until evenly combined,

5. Scoop the granola onto the baking sheet and spread into a thin layer.

6. Bake for around 15-25 minutes, or until lightly golden(Base how long you bake off of how crunchy you want it)

7. Allow the granola to cool for at least 3o minutes or until completely cool; then break apart into clusters and store in an airtight container for a few weeks.

Great for on-the-go healthy snacks, meal prep, on top of greek yogurt, etc and you can always customize. Happy baking!
